Kid Approved Pancakes

1 1/2 C ground oat flour

1/2 C brown rice flour

1 C unsweetened vanilla almond milk

1 whole egg

1 egg white

1 jar of carrot baby food

pinch of salt

pinch of cinnamon

pinch of ground ginger

1/4 tsp baking soda.

Mix and cook!

These are easy and delicious! My kids LOVED them! I topped them off with a couple mini chocolate chips and PB and of course a little bit of real Maple syrup!



1/4 C oatmeal (I used steel cut organic)
1/2 C water
*cook  in the microwave for 1 minute

Heat a pan coated with butter flavored organic spray (Pam).
Put cooked oats in pan.

I added the following seasonings:

* Mrs. Dash Garlic and Herb
* Crushed red peper
* Sea Salt
* Black Peper

Sorry I don’t measure, just added a little bit of this and that. Less Sea Salt of course and loaded it up with Mrs. Dash…love that stuff!

I cooked it on medium heat till it got a little brown then tossed my egg whites in the same pan to cook with the lid on it.  It was so yummy!!!

Candy Bar Protein Shake

1 Scoop MGN Chocolate Protein Powder
1 TBS extra virgin organic coconut oil
1 tsp ground flax seed
crushed ice ( I used a little bit)
**organic cocoa powder (if desired)

Blend and enjoy! SO YUMMY. This puts an Almond Joy candy bar to SHAME!

Carb UP Carrot Cake

1 jar of carrot baby food

1/2 banana

1/3 C oatmeal (dry)

dash of baking powder

dash of cinnamon

packet of stevia

dash of nutmeg

spash of almond milk (sorry I didn’t measure 😦 ).

Mix in magic bullet. Preheat oven to 350 degrees, place muffin paper in muffin tin. Fill each cup about half way.  Sprinkle a bit more cinnamon on top. Bake for about 15 min. They turned out a bit gooey but it was like a pumpkin cake consistency. Top with light cool whip! Serve warm, so good!

Gluten Free PB/Chocolate Cupcakes

Recipe: 1/2 C natural PB, 1/2 C honey, 2 eggs, 1/4 tsp sea salt, 1/4 tsp baking soda, 1/2 C (60 % or more cacao chips). 1 tsp cinnamon, 1/3 C almond flour/meal.  Mix and pour into baking cups. Bake for 20 min at 350 degrees.

For icing: 1 C chips (same as above ), 1/2… C grapeseed oil (I used coconut oil), 1 Tbs vanilla extract, dash of sea salt. Melt over low heat in a pot. Pour into bowl and freeze for about 15 min.
